George Brown College’s east-end campus has gone through some major overhauls in recent years, but nothing is quite as unique as the Chefs’ House. The “house” is, in fact, an industrial heritage building that now serves as an inspired teaching restaurant for culinary arts students. The building’s upgrades are the work of Kearns Mancini Architects and Gow Hastings Architects, who have created not only a state-of-the-art kitchen facility but also a great place to dine gourmet, sampling meals prepared and served by chefs-in-training. Through four-metre-high street-level windows, pedestrians can watch students chop and dice at the prep stations in the bustling kitchen. The exposed brick and stainless steel countertops contrast with red tiles and a backlit glass bar. It’s as upscale as any four-star restaurant. John Higgins, the program’s director, says the street view adds a “transparency and honesty” to the cooking process. By Natalie Williams. Photography by Tom Arban
